Dr Edward Howell introduced the “Food Enzyme Concept” and published a book Enzyme Nutrition. He claims,“When we eat cooked, enzyme-free food, the body is forced to produce enzymes needed for digestion. This depletes the body’s limited enzyme capacity… The resulting metabolic dislocations may be the direct cause of cancer,”

Support claim:
Dr. Humbart Santillo, is a doctor of naturaopathy and a master herbalist. He is also a renowned lecturer and the author of six books on natural health.
In his book Food Enzymes: Missing Link to Radiant Health, he supports Dr Edward Howell’s Enzyme theory on the benefit of enzyme supplementation and the food enzymes function. He claims that
cooking the food destroys the enzymes, which leads to enzyme-depletion in human digestive systems. This causes rapid aging and fatigue and lays the foundation for chronic disease to develop. So human can keep their vitality with enzyme-rich raw foods.

In Christopher wanjek (health and science journalist) his article Reality Check: 5 Risks of a Raw Vegan Diet, he agreed with Dr Edward Howell’s concept on heat destroys enzymes but he doesn’t believe that raw food enzymes would contribute to the human digestion. He claims that humans make their own digestive enzymes to break down large food molecules into smaller ones. Ironically for the raw vegan, most of the plant enzymes in raw food get destroyed anyway in gut. Only a few make it to the small intestine. Therefore, their contribution to digestion appears to be minimal.
