Activity: After reading this chapter, please log on to the website of a large hotel in your area and review their banquet menu. Does their menu reflect the menu guidelines outlined within chapter 14? Do you think this menu would be appealing to meeting planners and why? Pertaining to food and beverage, are any sustainable options offered?

As sustainable options become more and more in demand within the meetings industry, many resources are now available with information on how to plan sustainable meetings. For this activity:

Research the current information available on sustainable meetings pertaining to what opportunities and options meeting planners might expect from their meeting venues as it relates to food and beverage?
List ten of these options. For each option listed, discuss one pro and one con of incorporating these options into a meeting. Also, please reference each option by including the website. Two or more websites should be reviewed for this exercise.
Look again at the website you chose to review for the Activity for this chapter (banquet menu of hotel). Are any of the sustainable options you found available within the hotel you chose to review? Please note which options are available and which hotel you chose to review.
